As a mother of 3 young boys who love chocolate despite my best efforts (I am not a chocolate lover), we enjoy making S’mores Nachos each summer and they love to help get the nachos ready for cooking. We always keep extra graham crackers on the side to dip into the nachos for more yummy goodness.”

Why would I do such an unusual thing with my imaginary winnings? In honor of National Potato Day of course. Today is the day we celebrate the many delicious ways one can enjoy the versatile tuber. I’m a bit old school and prefer mashed but au gratin is certainly a strong second on my favorite list. How about you?
Today’s fun with fungi comes from Gamesviller Kellyohara! Did you know that the early Romans believed that mushrooms were the food of the gods? Boy were they right! Besides the fact that mushrooms contain anti-oxidants and no cholesterol, tasty recipes such as this give you a chance to experiment with various fillings. I can’t wait to try this one out over the weekend! Kellyohara adds, “I have always been afraid to try mushrooms – the texture and sliminess made me think that I wouldn’t like them. When my roommate made this recipe for a party I had to try them because they smelt so good (plus I love cheese!).
